I just got my GT Brick today, and it's got a balanced XLR out.

My other preamps use 1/4 inch out, which I plug right into a line-in on the E-mu Audiodock.

What's the best way to plug the Brick in? Get an XLR-to-1/4 inch cable, or just go into the XLR mic input on the audiodock?

As long as the +48V switch is off, the AudioDock's preamp is not influencing the signal from the Brick, right? Thanks! :D

It would be best if you use any of the line inputs on the back of the AudioDock rather then the Mic/Line inputs on the front. The front inputs have mic preamp and since the AudioDock has no pad, you would likely need to add some preamp gain to get to line level which is adding another gain stage that is really un-necessary if you have another and better option to use the line input.
