Mac upgrades?

Hey everyone
I am also quite a newb to recording, got some basic equipment and I'm not sure whether or not upgrades are required/possible. I have last year's Mac book, Apogeeinterface/logic pro. The thing is the Apogee/Duet interface only allows to inputs at one time, and Im looking to start recording some higher quality drums/multiple instruments at once.

Mac recommended specifications

Looking to buy a second hand Powermac G5 because my current system (a pc) is dying of age. I don't need to have the fastest of the fastest, and I don't have the budget for it, so I'm not really into the latest line of Mac Pro's. However, I want a solid system on which I can run PT 7.x with a Digi002 interface for a couple of years to come.

WHere are your peaks?

I've been wondering lately if I should be leaving more headroom while tracking and mixing both. I use Cubase 4 and I usually try to record with my console input meters hitting about -6db just because I heard that somewhere. However, I find myself maxing out the mix pretty quick when adding more tracks and whatnot. Any general guidelines that I should know about?
